- 1 1/2 cups rolled oats
- 1 cup raw cashews
- 1/2 cup creamy cashew butter
- 1/4 cup pure maple syrup
- 1/4 cup Medjool dates, pitted
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup freeze-dried strawberries, crushed
- 1/4 cup white chocolate chips
- 1 tsp coconut oil
Instructions
- In a food processor, pulse the rolled oats and raw cashews until a fine, flour-like consistency is achieved.
- Add the pitted Medjool dates and pulse until evenly distributed.
- Mix in cashew butter, maple syrup, vanilla extract, and salt. Blend until a sticky dough forms, scraping down sides as needed.
- Transfer dough to a mixing bowl and fold in crushed freeze-dried strawberries.
- Scoop and roll the dough into uniform balls, placing on a parchment-lined tray.
- Freeze for 20-30 minutes to firm up the bites.
- In a microwave-safe bowl, melt white chocolate chips and coconut oil until smooth.
- Drizzle melted chocolate over the bites and garnish with more freeze-dried strawberries.
- Allow to set in the fridge, then store in an airtight container.
Notes
Customize by using different freeze-dried fruits or nut butters. Store in the fridge for a week or freeze for up to three months.
