Description

A flavorful fusion of Mexican spices and hearty rice, perfect for family dinners or gatherings.


Ingredients

  • 1 cup rice
  • 1 lb ground chicken or beef
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • Fresh cilantro for garnish

Instructions

  1. Cook the rice as per package instructions, using vegetable broth for added flavor if desired.
  2. In a large skillet over medium heat, add the ground chicken or beef and cook until browned, draining any excess fat.
  3. Stir in the taco seasoning, black beans, corn, and diced tomatoes. Heat through.
