Description

A vibrant and comforting taco rice bowl filled with savory beef, fresh vegetables, and customizable toppings.

Ingredients

Scale
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 pound ground beef (or ground turkey, chicken, or a plant-based substitute)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix (or 2 tablespoons homemade taco seasoning)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 2 avocados, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Salt and pepper to taste
  • Optional toppings: jalapeño slices, sour cream, salsa

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes.
  3. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until onion is translucent, about 3 minutes.
  4. Add ground beef (or your chosen protein) to the skillet. Cook, breaking it apart, until browned and fully cooked, about 5-7 minutes. Drain excess fat.
  5. Stir in taco seasoning, black beans, and corn. Cook for another 2-3 minutes.
  6. Divide the cooked rice among serving bowls. Top with the beef mixture, cherry tomatoes, cheddar cheese, and diced avocado.
  7. Garnish with chopped cilantro and serve with lime wedges. Add any additional toppings as desired.

Notes

Customize with your favorite proteins and toppings for a personalized experience. Great for meal prep!
