Description

Delicious rolls filled with caramelized onions and sautéed spinach, perfect for a snack or appetizer.


Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm water
  • 1 tablespoon sugar
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1 tablespoon olive oil (for filling)
  • 2 large onions, thinly sliced
  • 3 cups fresh spinach
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup marinara sauce
  • Salt and pepper to taste
  • 2 tablespoons nutritional yeast (optional, for topping)

Instructions

  1. In a small bowl, combine the yeast, warm water, and sugar. Let sit for 5–10 minutes until foamy.
  2. In a large mixing bowl, whisk together the flour and salt. Pour in the yeast mixture and olive oil, and mix until a shaggy dough forms.
  3. Knead the dough on a floured surface for 8–10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour.
  4. Heat olive oil in a pan over medium-low heat. Add onions and caramelize for 15–20 minutes until golden, then stir in garlic, spinach, oregano, and red pepper flakes. Cook for 2–3 minutes, season, and let cool.
  5. Preheat oven to 375°F (190°C). Grease a baking dish.
  6. Roll out dough into a rectangle, spread marinara sauce, and layer the cooled filling. Roll tightly and cut into 10–12 pieces.
  7. Place in the baking dish, sprinkle with nutritional yeast, and bake for 25–30 minutes until puffed and golden.
  8. Cool slightly before serving.

Notes

Make the filling ahead of time to save on preparation. Rolls can be served fresh or chilled.
