Delicious rolls filled with caramelized onions and sautéed spinach, perfect for a snack or appetizer.

- 2 1/4 teaspoons active dry yeast
- 1 cup warm water
- 1 tablespoon sugar
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 1 tablespoon olive oil (for filling)
- 2 large onions, thinly sliced
- 3 cups fresh spinach
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup marinara sauce
- Salt and pepper to taste
- 2 tablespoons nutritional yeast (optional, for topping)
Instructions
- In a small bowl, combine the yeast, warm water, and sugar. Let sit for 5–10 minutes until foamy.
- In a large mixing bowl, whisk together the flour and salt. Pour in the yeast mixture and olive oil, and mix until a shaggy dough forms.
- Knead the dough on a floured surface for 8–10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour.
- Heat olive oil in a pan over medium-low heat. Add onions and caramelize for 15–20 minutes until golden, then stir in garlic, spinach, oregano, and red pepper flakes. Cook for 2–3 minutes, season, and let cool.
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Roll out dough into a rectangle, spread marinara sauce, and layer the cooled filling. Roll tightly and cut into 10–12 pieces.
- Place in the baking dish, sprinkle with nutritional yeast, and bake for 25–30 minutes until puffed and golden.
- Cool slightly before serving.
Notes
Make the filling ahead of time to save on preparation. Rolls can be served fresh or chilled.
