Description

Delightful truffles that combine the sweetness of ripe watermelon with the richness of white chocolate, creating a refreshing summer treat.


Ingredients

Scale
  • 1 package White Cake Mix (15.25 ounces)
  • 1/2 cup all-purpose flour
  • 2 sticks unsalted butter (room temperature)
  • 1/2 cup mini chocolate chips
  • 8 drops pink gel food color
  • 1 teaspoon watermelon extract (optional)
  • 2 packages Wilton Green Candy Melts (12 ounces each)
  • Milk (if needed)

Instructions

  1. Prepare a baking sheet covered with waxed paper.
  2. In a large bowl, mix the softened butter, cake mix, and flour until smooth.
  3. Add watermelon extract and pink gel food color, folding gently.
  4. If too crumbly, add milk to achieve desired consistency.
  5. Fold in mini chocolate chips.
  6. Using a cookie scoop, form truffle balls and place them on the baking sheet.
  7. Chill truffles in the freezer for 10 minutes or refrigerate for 30 minutes.
  8. Melt the Wilton Green Candy Melts in a microwave-safe bowl.
  9. Dip chilled truffles into the melted coating and let excess drip away.
  10. Return the coated truffles to the baking sheet to set.

Notes

Truffles can be stored in an airtight container for up to a week in the refrigerator or three months in the freezer. Thaw at room temperature before serving.
