Description

A vibrant wrap filled with grilled chicken, avocado, fresh veggies, and pico de gallo, perfect for summer lunches.


Ingredients

  • Tortillas (whole wheat, spinach, or flour)
  • Grilled Chicken (or rotisserie chicken/tofu for vegetarian)
  • Avocado
  • Fresh Veggies (bell peppers, cucumbers, mixed greens)
  • Pico de Gallo or Salsa
  • Cheese (optional, feta or shredded)

Instructions

  1. Prepare the chicken by grilling it seasoned with salt and pepper for 5-7 minutes on each side until cooked through.
  2. Meanwhile, chop the fresh veggies and mix them in a bowl.
  3. Warm the tortilla in the same skillet for 30 seconds on each side.
  4. Assemble the wrap by layering grilled chicken, veggies, avocado, and pico de gallo on the tortilla.
  5. Wrap it tightly, tuck in the sides, and slice in half to serve.
  6. Enjoy immediately, served with a slice of lime.
