- 4 medium zucchinis, sliced
- 1 lb ground turkey or beef
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1 tsp Italian seasoning
- 1 medium onion, chopped
- 1 bell pepper, chopped
Instructions
- Preheat your oven to 375°F (190°C) and prepare a large baking dish with cooking spray.
- In a skillet over medium heat, brown the ground meat for 5-7 minutes, breaking it apart as it cooks. Drain excess fat.
- Stir in the Italian seasoning, then add onion and bell pepper. Sauté for 3-4 minutes until softened.
- Layer half of the sliced zucchini in the baking dish, followed by half of the meat mixture and half of the marinara sauce. Repeat layering with the remaining zucchini, meat, and sauce.
- Top with shredded mozzarella cheese. Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until golden and bubbly.
Notes
Consider chilling the casserole overnight for deeper flavors; increase baking time slightly when baking from cold. Customize with your favorite toppings or substitute ingredients for variety.
