Description

A decadent dessert combining rich blackberry flavor with creamy vanilla bean mousse, perfect for any celebration.


Ingredients

  • 2 cups blackberries
  • 1 cup sugar
  • 1/4 cup water
  • 1/2 teaspoon vanilla bean paste
  • 3 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon gelatin
  • 6 eggs
  • 1 cup all-purpose flour
  • 1/2 cup butter
  • 1 teaspoon baking powder
  • 1 pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour your cake pan.
  2. Combine blackberries, sugar, and water in a medium saucepan. Cook over medium heat for about 5–7 minutes.
  3. Strain the mixture through a fine mesh sieve to create a smooth, seedless blackberry sauce.
  4. Whip together 1.5 cups of heavy cream and powdered sugar until soft peaks form.
  5. Fold in the cooled blackberry puree and vanilla bean paste.
  6. Beat eggs and the remaining sugar until fluffy. Pour in melted butter and combine.
  7. Sift together flour, baking powder, and salt. Gradually mix into the egg mixture until just combined.
  8. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
  9. Cool completely on a wire rack.
  10. Dissolve gelatin in a couple of tablespoons of warm water, then mix it into the remaining whipped cream.
  11. Fold this mixture into the blackberry mousse.
  12. Layer the cooled cake with the mousse and refrigerate for at least 4 hours to set.
  13. Adorn with fresh blackberries before serving.

Notes

Make ahead for best flavor. Can substitute frozen blackberries if fresh are unavailable.
