- 2 large eggs
- 1/4 cup grated Parmesan cheese

- Salt and pepper to taste
- Oil for frying
Instructions
- In a large mixing bowl, blend the chopped broccoli, shredded cheese, all-purpose flour, eggs, grated Parmesan cheese, garlic powder, onion powder, and a generous pinch of salt and pepper. Stir until you have a cohesive mixture that sticks together.
- Warm a splash of oil in a non-stick skillet over medium heat. You want just enough oil to coat the bottom of the skillet for optimal frying.
- Using a spoon, drop dollops of your mixture into the hot skillet. Gently flatten each fritter with the back of the spoon to promote even cooking.
- Cook for about 3-4 minutes per side, flipping when the edges turn a beautiful golden brown.
- Remove the fritters and transfer them to a plate lined with paper towels to absorb excess oil.
