Description

Deliciously crispy broccoli fritters that combine fresh broccoli and gooey cheese for a flavorful snack or appetizer.


Ingredients

  • 2 cups fresh broccoli, chopped
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large mixing bowl, blend the chopped broccoli, shredded cheese, all-purpose flour, eggs, grated Parmesan cheese, garlic powder, onion powder, and a generous pinch of salt and pepper. Stir until you have a cohesive mixture that sticks together.
  2. Warm a splash of oil in a non-stick skillet over medium heat. You want just enough oil to coat the bottom of the skillet for optimal frying.
  3. Using a spoon, drop dollops of your mixture into the hot skillet. Gently flatten each fritter with the back of the spoon to promote even cooking.
  4. Cook for about 3-4 minutes per side, flipping when the edges turn a beautiful golden brown.
