- 1/2 cup brown sugar
- 1 cup unsalted butter, melted
- 3 large eggs
- 2 cups grated carrots
- 1 cup chopped nuts (optional)
- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 1 tablespoon milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
- Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
- Blend the granulated sugar, brown sugar, and melted butter until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir the dry ingredients into the wet mixture until just combined; do not overmix.
- Fold in the grated carrots and nuts gently.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Beat together the cream cheese, powdered sugar, milk, and vanilla until smooth.
- Drizzle the frosting over the cooled bars, cut into squares, and serve.
Notes
Allow the cream cheese mixture to come to room temperature for easier mixing. Customize with raisins or coconut for extra flavor.
