Description

A comforting and flavorful dish combining seasoned beef, rice, and melted cheese, perfect for family gatherings or busy weeknights.


Ingredients

Scale
  • 1 pound ground beef
  • 1 cup rice
  • 2 cups water or beef broth
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 can diced tomatoes (optional)
  • 1 cup corn (optional)
  • Salt and pepper to taste
  • Toppings: sour cream, avocado, salsa

Instructions

  1. Add the ground beef to a large skillet over medium heat and cook until browned and crumbly, breaking it apart with a spatula. Drain excess fat.
  2. Sprinkle the taco seasoning over the beef and stir well.
  3. Pour in the water or beef broth and add the rice, stirring to combine.
  4. Bring to a gentle boil.
  5. Reduce heat to low, cover with a lid, and let simmer for about 20 minutes.
  6. If using, stir in the optional diced tomatoes and corn after the rice is cooked.
  7. Turn off the heat and sprinkle cheese over the top, cover, and let melt.
  8. Serve hot with your favorite toppings.
