- 1 pound ground beef
- 1 cup rice
- 2 cups water or beef broth
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 can diced tomatoes (optional)
- 1 cup corn (optional)
- Salt and pepper to taste
- Toppings: sour cream, avocado, salsa
Instructions
- Add the ground beef to a large skillet over medium heat and cook until browned and crumbly, breaking it apart with a spatula. Drain excess fat.
- Sprinkle the taco seasoning over the beef and stir well.
- Pour in the water or beef broth and add the rice, stirring to combine.
- Bring to a gentle boil.
- Reduce heat to low, cover with a lid, and let simmer for about 20 minutes.
- If using, stir in the optional diced tomatoes and corn after the rice is cooked.
- Turn off the heat and sprinkle cheese over the top, cover, and let melt.
- Serve hot with your favorite toppings.
