- 4 chicken thighs
- 2 tablespoons chipotle honey sauce
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 2 cups potatoes, peeled and cubed
- 1/2 cup milk
- 1/4 cup smoked gouda cheese, shredded
- Butter, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Mix chipotle honey, smoked paprika, garlic powder, salt, and pepper in a bowl.
- Coat the chicken thighs with the mixture and place them in a baking dish.
- Bake for about 25-30 minutes or until the chicken is fully cooked.
- Meanwhile, boil the potatoes until tender, about 15 minutes.
- Drain and mash the potatoes with milk and butter.
- Stir in the smoked gouda until melted and creamy.
- Serve the chicken thighs with the smoked gouda mashed potatoes.
Notes
Marinate the chicken up to 24 hours before cooking for enhanced flavor. Use an air fryer for a quicker, crispier result.
