Description

These cilantro lime grilled chicken tacos boast a vibrant flavor profile with juicy marinated chicken, fresh toppings, and zesty lime.


Ingredients

  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tsp ground cumin

  • 8 small corn or flour tortillas
  • Diced onions for topping
  • Chopped cilantro for topping
  • Sliced avocados for topping
  • Lime wedges for serving

Instructions

  1. Prepare the Marinade: In a medium mixing bowl, whisk together lime juice, olive oil, chopped cilantro, minced garlic, cumin, and salt until well combined.
  2. Marinate the Chicken: Place chicken breasts into the marinade, turning to coat evenly. Cover and refrigerate for at least 30 minutes or up to six hours.
  3. Preheat the Grill: Heat your grill to medium-high.
  4. Grill the Chicken: Cook the marinated chicken for about 6-7 minutes on each side, or until internal temperature reaches 165°F (75°C).
