Description

A comforting and flavorful taco casserole made effortlessly in a slow cooker, perfect for family dinners or gatherings.


Ingredients

  • 1 lb ground beef
  • 1 cup taco seasoning
  • 2 cups cooked pasta or rice
  • 2 cups shredded cheese
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup bell peppers, chopped
  • Salt and pepper to taste

Instructions

  1. Brown the meat: In a skillet heated over medium heat, add the ground beef along with the taco seasoning. Stir until fully cooked.
  2. Combine ingredients: In your slow cooker, combine the cooked ground beef and the pre-cooked pasta or rice. Add the diced tomatoes, black beans, corn, and chopped bell peppers, mixing everything gently.
  3. Cheese layer: Generously sprinkle the shredded cheese on top of the mixture.
  4. Slow cook: Cover and cook on low for 4-6 hours or high for 2-3 hours.
  5. Serve & garnish: Once it’s done, serve warm straight from the slow cooker with optional toppings.

Notes

Make-ahead tips include assembling the casserole the night before and refrigerating it. If you don’t have a slow cooker, it can be baked in the oven.
