- 1 lb ground beef
- 1 cup taco seasoning
- 2 cups cooked pasta or rice
- 2 cups shredded cheese
- 1 can diced tomatoes
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup bell peppers, chopped
- Salt and pepper to taste
Instructions
- Brown the meat: In a skillet heated over medium heat, add the ground beef along with the taco seasoning. Stir until fully cooked.
- Combine ingredients: In your slow cooker, combine the cooked ground beef and the pre-cooked pasta or rice. Add the diced tomatoes, black beans, corn, and chopped bell peppers, mixing everything gently.
- Cheese layer: Generously sprinkle the shredded cheese on top of the mixture.
- Slow cook: Cover and cook on low for 4-6 hours or high for 2-3 hours.
- Serve & garnish: Once it’s done, serve warm straight from the slow cooker with optional toppings.
Notes
Make-ahead tips include assembling the casserole the night before and refrigerating it. If you don’t have a slow cooker, it can be baked in the oven.
