- 1 tablespoon apple cider vinegar

Instructions
- Boil the potatoes: Fill a large pot with water, adding salt. Bring to a boil, add potatoes, and cook until tender, about 15-20 minutes. Drain and cool.
- Prepare the dressing: In a mixing bowl, whisk mayonnaise, Dijon mustard, and apple cider vinegar until smooth.
- Combine ingredients: Fold cooled potatoes into the dressing, then add eggs, celery, and green onions.
- Season to taste: Add salt and pepper, tasting as you go.
- Garnish and chill: Transfer to a serving dish, sprinkle paprika, and chill for at least 1 hour.
