Description

A creamy and flavorful potato salad inspired by deviled eggs, perfect for summer gatherings.


Ingredients

  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar

Instructions

  1. Boil the potatoes: Fill a large pot with water, adding salt. Bring to a boil, add potatoes, and cook until tender, about 15-20 minutes. Drain and cool.
  2. Prepare the dressing: In a mixing bowl, whisk mayonnaise, Dijon mustard, and apple cider vinegar until smooth.
  3. Combine ingredients: Fold cooled potatoes into the dressing, then add eggs, celery, and green onions.
  4. Season to taste: Add salt and pepper, tasting as you go.
