Description

A no-bake pie featuring a creamy filling and a vibrant mix of berries, perfect for any occasion.


Ingredients

  • 1 1/2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy whipping cream
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup berry jam or sauce

Instructions

  1. Prepare the crust: In a mixing bowl, combine the crushed graham crackers with the melted butter. Mix until the crumbs are evenly coated. Press firmly into the bottom of a 9-inch pie pan.
  2. Whip the cream: In a separate bowl, whip the heavy cream using an electric mixer until stiff peaks form.
  3. Beat the cream cheese: In another bowl, beat the softened cream cheese until smooth and creamy. Gradually add powdered sugar and vanilla extract, mixing until well combined.
  4. Fold it together: Gently fold the whipped cream into the cream cheese mixture.
  5. Layer the pie: Pour half of the creamy filling into the crust.
  6. Add the berries: Scatter the mixed berries over the creamy base and drizzle with berry jam.
  7. Finish the filling: Pour the remaining filling over the berries.
  8. Swirl with jam: Lightly swirl the remaining jam on top.
  9. Chill: Refrigerate the pie for at least 240 minutes or until it sets nicely.
  10. Serve cold: Slice into wedges and enjoy.

Notes

For best flavor, prepare the pie a day in advance. Store leftovers in the refrigerator for up to three days.
