- 1 cup cooked rice
- 200 grams shrimp, peeled and deveined
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium heat, adding the olive oil until it shimmers.
- Cook the shrimp until they turn pink, about 3-4 minutes.
- Push the shrimp to one side and pour in the beaten eggs, scrambling them before mixing with the shrimp.
- Toss in the mixed vegetables and sauté for 2-3 minutes until softened.
- Stir in the cold cooked rice and soy sauce, mixing thoroughly.
- Season with salt and pepper, and fold in the chopped green onions. Serve hot.
Notes
For best results, use day-old rice. Customize with other vegetables as desired.
