Description

A comforting and quick shrimp fried rice recipe filled with vibrant veggies and rich flavors, perfect for busy weeknights.


Ingredients

Scale
  • 1 cup cooked rice
  • 200 grams shrimp, peeled and deveined
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat, adding the olive oil until it shimmers.
  2. Cook the shrimp until they turn pink, about 3-4 minutes.
  3. Push the shrimp to one side and pour in the beaten eggs, scrambling them before mixing with the shrimp.
  4. Toss in the mixed vegetables and sauté for 2-3 minutes until softened.
  5. Stir in the cold cooked rice and soy sauce, mixing thoroughly.
  6. Season with salt and pepper, and fold in the chopped green onions. Serve hot.

Notes

For best results, use day-old rice. Customize with other vegetables as desired.
