Description

A comforting one-pan dish featuring tender chicken, fluffy rice, and a creamy sauce, perfect for family dinners or potlucks.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 can cream of chicken soup
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup frozen mixed vegetables (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the rice, chicken broth, cream of chicken soup, chopped onion, garlic powder, salt, and pepper in a large baking dish.
  3. Lay the chicken breasts on top of the rice mixture.
  4. Cover the baking dish tightly with aluminum foil.
  5. Bake in the preheated oven for 1 hour.
  6. Remove the foil and bake for an additional 15 minutes.
  7. If desired, stir in the frozen mixed vegetables during the last 10 minutes of baking.
  8. Serve hot and enjoy!

Notes

Make-ahead tips: Prepare the rice mixture a day ahead and store it covered in the fridge. For cooking, just place the chicken on top and bake.
