Description

A delightful dish featuring vibrant green beans paired with buttery toasted almonds and a zesty squeeze of lemon.

Ingredients

Scale
  • 1 pound of green beans, trimmed
  • 2 tablespoons unsalted butter (or olive oil for a vegan option)
  • 1/4 cup sliced almonds
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Blanch the green beans: Fill a large pot with salted water and bring to a boil. Add green beans and cook for about 3-4 minutes. Drain and plunge into an ice bath to preserve color and crunch.
  2. Melt the butter: In a skillet over medium heat, add the butter and allow it to melt completely.
  3. Toast the almonds: Add sliced almonds to the skillet, stirring for about 2 minutes until golden brown.
  4. Combine the flavors: Stir blanched green beans into the skillet, tossing until coated in the butter and almond mixture for about a minute.
  5. Finish with zest: Drizzle with lemon juice and season with salt and pepper to taste. Serve warm.

Notes

Make-ahead tips: Blanch the green beans several hours in advance and store in an airtight container in the fridge. Great for meal prep!
