Description

A comforting one-pan dish featuring ground beef, diced potatoes, and colorful vegetables, all seasoned to perfection.


Ingredients

  • 1 pound ground beef (80% lean, 20% fat)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups potatoes, diced (Yukon Gold or red)
  • 1 can (15 oz) diced tomatoes
  • 1 cup green bell pepper, chopped
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Chopped parsley for garnish (optional)

Instructions

  1. Heat a large skillet over medium heat. Add the ground beef, breaking it apart as it cooks until golden brown. Drain excess fat.
  2. Toss in the chopped onion and minced garlic, cooking for 3-4 minutes until the onion is translucent.
  3. Add the diced potatoes to the pan, stirring to allow them to crisp and cook for about 10 minutes.
  4. Introduce the diced tomatoes and chopped bell pepper, seasoning with paprika, salt, and pepper, and cook for an additional 5-7 minutes.
  5. If using, sprinkle cheese on top, cover, and let it melt for a few minutes.
  6. Serve warm, garnished with fresh parsley.

Notes

Store leftovers in an airtight container for up to 3 days. For freezing, cool completely before transferring to a freezer-safe container. To reheat, add a splash of water or broth to keep it moist.
