- 1 pound ground beef (80% lean, 20% fat)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups potatoes, diced (Yukon Gold or red)
- 1 can (15 oz) diced tomatoes
- 1 cup green bell pepper, chopped
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Chopped parsley for garnish (optional)
Instructions
- Heat a large skillet over medium heat. Add the ground beef, breaking it apart as it cooks until golden brown. Drain excess fat.
- Toss in the chopped onion and minced garlic, cooking for 3-4 minutes until the onion is translucent.
- Add the diced potatoes to the pan, stirring to allow them to crisp and cook for about 10 minutes.
- Introduce the diced tomatoes and chopped bell pepper, seasoning with paprika, salt, and pepper, and cook for an additional 5-7 minutes.
- If using, sprinkle cheese on top, cover, and let it melt for a few minutes.
- Serve warm, garnished with fresh parsley.
Notes
Store leftovers in an airtight container for up to 3 days. For freezing, cool completely before transferring to a freezer-safe container. To reheat, add a splash of water or broth to keep it moist.
