- 1 lb chicken breast, shredded
- 4 cups chicken broth
- 2 cups carrots, chopped
- 1 cup celery, chopped
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 cups kale or spinach (optional)
Instructions
- Sauté the chopped onion and minced garlic in a large pot with olive oil over medium heat until softened—about 5 to 7 minutes.
- Add the chopped carrots and celery, stirring frequently until tender—around 5 to 7 minutes.
- Bring in the shredded chicken, chicken broth, thyme, salt, and pepper. Stir and allow to come to a gentle boil.
- Simmer the mixture on low heat for 20 to 25 minutes, covered, to meld the flavors.
- Incorporate the kale or spinach during the last 5 minutes of cooking.
- Serve warm, optionally topped with fresh herbs or alongside crusty bread.
Notes
This soup improves in flavor if made a day ahead. Can substitute chicken with turkey or use vegetable broth for a vegetarian version.
