Description
Delight in the rich chocolate and refreshing mint flavor of homemade peppermint patties, perfect for any occasion.
Ingredients
Scale
- 1 cup powdered sugar
- 1/4 cup light corn syrup
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon peppermint extract
- 1/4 cup water
- 8 oz dark chocolate, chopped
- 1 tablespoon coconut oil (optional)
Instructions
- Mix the Filling: In a spacious mixing bowl, combine the powdered sugar, corn syrup, cocoa powder, peppermint extract, and water. Stir vigorously until the mixture clumps together and forms a smooth, dough-like consistency.
- Shape the Patties: Take small portions and roll them into balls or flatten them into round discs for classic patties.
- Chill the Patties: Lay each shaped patty on a parchment-lined baking sheet. Refrigerate for about 30 minutes to firm them up.
- Melt the Chocolate: Fill a double boiler with water and bring it to a gentle simmer. Place your chopped dark chocolate in the top half and melt it, stirring occasionally. Mix in coconut oil for a gloss if desired.
- Dip in Chocolate: Remove the chilled patties and dip each into the melted chocolate, letting the excess drip off before placing them back on the parchment paper.
- Let Them Harden: Allow the chocolate-coated patties to cool at room temperature or refrigerate until set.
Notes
Make ahead by preparing the filling a day in advance. Customize by adding crushed peppermint candy or drizzling with white chocolate.
