Description

A delightful dish combining caramelized chicken with sweet potatoes and crisp green beans, all enveloped in a rich honey garlic glaze.


Ingredients

  • 4 chicken breasts (boneless, skinless)
  • 2 sweet potatoes (cubed)
  • 1 lb green beans (trimmed)
  • 1/4 cup honey
  • 4 cloves garlic (minced)
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes into 1-inch pieces.
  3. Trim the ends off the green beans.
  4. In a mixing bowl, whisk together honey, minced garlic, soy sauce, olive oil, salt, and pepper until well blended.
  5. In a baking dish, layer the chicken breasts, followed by the sweet potatoes and green beans.
  6. Pour the sauce over the layered ingredients and gently toss to ensure everything is well coated.
  7. Bake for 25-30 minutes, until the chicken reaches an internal temperature of 165°F (75°C) and the sweet potatoes are fork-tender.
  8. Serve warm, drizzled with any remaining sauce.
