Description

A harmonious blend of jerk spices and coconut milk creates tender meatballs enveloped in a luscious curry sauce.


Ingredients

  • 1 pound ground beef or turkey
  • 2 tablespoons jerk seasoning
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • Chopped cilantro for garnish

Instructions

  1. Combine the ground meat, jerk seasoning, breadcrumbs, egg, chopped green onions, and a pinch of salt and pepper in a mixing bowl.
  2. Shape the mixture into meatballs about one inch in diameter.
  3. Warm the vegetable oil in a large skillet over medium heat.
  4. Add the meatballs in batches and brown on all sides for about 7-10 minutes.
  5. Pour the coconut milk into a medium pot, followed by the curry powder, soy sauce, and brown sugar; whisk and bring to a gentle simmer.
  6. Transfer the browned meatballs into the simmering sauce and let them cook for about 15-20 minutes.
  7. Serve warm, garnished with chopped cilantro.

Notes

Try adding panko breadcrumbs for extra crunch or adjust spice levels to suit your taste.
