- 1 pound ground beef or turkey
- 2 tablespoons jerk seasoning
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup chopped green onions

- 1 tablespoon vegetable oil
- 1 can (13.5 oz) coconut milk
- 2 tablespoons curry powder
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- Chopped cilantro for garnish
Instructions
- Combine the ground meat, jerk seasoning, breadcrumbs, egg, chopped green onions, and a pinch of salt and pepper in a mixing bowl.
- Shape the mixture into meatballs about one inch in diameter.
- Warm the vegetable oil in a large skillet over medium heat.
- Add the meatballs in batches and brown on all sides for about 7-10 minutes.
- Pour the coconut milk into a medium pot, followed by the curry powder, soy sauce, and brown sugar; whisk and bring to a gentle simmer.
- Transfer the browned meatballs into the simmering sauce and let them cook for about 15-20 minutes.
- Serve warm, garnished with chopped cilantro.
Notes
Try adding panko breadcrumbs for extra crunch or adjust spice levels to suit your taste.
