Description

Deliciously refreshing key lime pie bars with a buttery graham cracker crust and creamy filling, perfect for summer gatherings.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar
  • 2 (14-ounce) cans sweetened condensed milk
  • ¾ cup fresh key lime juice
  • 4 large egg yolks
  • Zest of 2 key limes
  • Whipped cream (for serving)
  • Lime wedges (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham cracker crumbs, melted butter, and sugar in a medium bowl.
  3. Press the crumb mixture into the bottom of a greased 9×9-inch baking dish.
  4. Whisk together sweetened condensed milk, key lime juice, egg yolks, and lime zest in another bowl.
  5. Pour the filling over the crust and spread evenly.
  6. Bake for 20-25 minutes until the filling is set but slightly jiggly in the center.
  7. Cool for 30 minutes, then chill in the fridge for at least 2 hours.
  8. Cut into squares and serve with whipped cream and a lime wedge.

Notes

Make-ahead: Store in the fridge for up to three days. Can be frozen for up to three months.
