Deliciously refreshing key lime pie bars with a buttery graham cracker crust and creamy filling, perfect for summer gatherings.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ⅓ cup granulated sugar
- 2 (14-ounce) cans sweetened condensed milk
- ¾ cup fresh key lime juice
- 4 large egg yolks
- Zest of 2 key limes
- Whipped cream (for serving)
- Lime wedges (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine graham cracker crumbs, melted butter, and sugar in a medium bowl.
- Press the crumb mixture into the bottom of a greased 9×9-inch baking dish.
- Whisk together sweetened condensed milk, key lime juice, egg yolks, and lime zest in another bowl.
- Pour the filling over the crust and spread evenly.
- Bake for 20-25 minutes until the filling is set but slightly jiggly in the center.
- Cool for 30 minutes, then chill in the fridge for at least 2 hours.
- Cut into squares and serve with whipped cream and a lime wedge.
Notes
Make-ahead: Store in the fridge for up to three days. Can be frozen for up to three months.
