- ½ cup Greek yogurt

- 4 cups powdered sugar
- 3 tbsp heavy cream
- 2 tbsp mango puree
- 2 tbsp strawberry puree
- Gel coloring (pink and orange)
Instructions
- Preheat oven to 350°F (175°C).
- Mix dry ingredients: whisk flour, baking powder, baking soda, and salt in a medium bowl.
- Cream butter and sugar until light and fluffy in a large bowl.
- Add eggs one at a time, then stir in vanilla, mango puree, and mango juice. Fold in Greek yogurt.
- Fill cupcake tins ¾ full with batter.
- Make strawberry filling by blending strawberries until smooth.
- Core cupcakes once cooled and fill with strawberry mixture.
- Prepare frosting: whip softened butter, gradually add powdered sugar, heavy cream, mango puree, and strawberry puree.
- Create color swirls in frosting with pink and orange gel colors.
- Pipe frosting onto cupcakes in a swirl motion.
Notes
For extra flavor, top each cupcake with a slice of mango or fresh strawberry. Make ahead and frost closer to serving for freshness.
