Description

Delight in the tropical flavors of these vibrant cupcakes featuring a fluffy mango base and a strawberry filling, topped with rainbow-hued frosting.


Ingredients

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter (softened)
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup ripe mango puree
  • ½ cup Greek yogurt
  • ¼ cup mango juice
  • 1 cup unsalted butter (softened) for frosting
  • 4 cups powdered sugar
  • 3 tbsp heavy cream
  • 2 tbsp mango puree
  • 2 tbsp strawberry puree
  • Gel coloring (pink and orange)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix dry ingredients: whisk flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream butter and sugar until light and fluffy in a large bowl.
  4. Add eggs one at a time, then stir in vanilla, mango puree, and mango juice. Fold in Greek yogurt.
  5. Fill cupcake tins ¾ full with batter.
  6. Make strawberry filling by blending strawberries until smooth.
  7. Core cupcakes once cooled and fill with strawberry mixture.
  8. Prepare frosting: whip softened butter, gradually add powdered sugar, heavy cream, mango puree, and strawberry puree.
  9. Create color swirls in frosting with pink and orange gel colors.
  10. Pipe frosting onto cupcakes in a swirl motion.

Notes

For extra flavor, top each cupcake with a slice of mango or fresh strawberry. Make ahead and frost closer to serving for freshness.
