Description

A comforting Mexican Tater Tot Casserole featuring crispy tater tots, seasoned meat, black beans, corn, and gooey cheese.


Ingredients

  • 1 bag frozen tater tots
  • 1 pound ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • Chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Brown the ground beef or turkey in a large skillet over medium heat, stirring frequently until no longer pink.
  3. Drain any excess fat.
  4. Stir in the taco seasoning, black beans, corn, and salsa. Cook for 2-3 minutes.
  5. Spread the meat mixture evenly in a greased casserole dish.
  6. Top with frozen tater tots in a single layer.
  7. Bake for 25-30 minutes until golden brown and crispy.
  8. Remove from the oven, sprinkle shredded cheese on top, and return to the oven for an additional 5-7 minutes until melted.
  9. Serve with sour cream and garnish with chopped green onions.
