- 1 bag frozen tater tots
- 1 pound ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- Chopped green onions (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Brown the ground beef or turkey in a large skillet over medium heat, stirring frequently until no longer pink.
- Drain any excess fat.
- Stir in the taco seasoning, black beans, corn, and salsa. Cook for 2-3 minutes.
- Spread the meat mixture evenly in a greased casserole dish.
- Top with frozen tater tots in a single layer.
- Bake for 25-30 minutes until golden brown and crispy.
- Remove from the oven, sprinkle shredded cheese on top, and return to the oven for an additional 5-7 minutes until melted.
- Serve with sour cream and garnish with chopped green onions.
