- 1 cup shredded coconut
- 1 cup rolled oats
- 1 cup chocolate chips
- 1/2 cup sweetened condensed milk
- 1/2 cup caramel sauce
- 1/4 cup butter
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Combine the dry ingredients: In a large mixing bowl, combine the shredded coconut, rolled oats, and a pinch of salt. Stir gently until mixed well.
- Melt the chocolate mixture: Over low heat, melt the butter and chocolate chips in a small saucepan until smooth and creamy. Remove from heat, then add the sweetened condensed milk and vanilla extract, stirring until blended.
- Pour the rich chocolate mixture over the oat and coconut mix. Stir until everything is evenly coated and luscious.
- Line a baking sheet with parchment paper. Form small, bite-sized rounds from the mixture and place them on the sheet.
- Drizzle each bite generously with caramel sauce, ensuring each one is deliciously adorned.
- Refrigerate for at least 30 minutes to set. Once chilled, serve cold and enjoy!
Notes
If the mixture feels too sticky, moisten your hands with oil to help shape the bites. They last well in the fridge for up to a week.
