Description

Tender pulled pork served in warm tortillas, topped with fresh veggies and zesty lime.


Ingredients

Scale
  • 2 pounds pork shoulder
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • Salt and pepper, to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Instructions

  1. Combine ingredients in your slow cooker: layer the pork shoulder, chopped onion, minced garlic, chili powder, cumin, salt, and pepper. Mix well.
  2. Slow cook on low for 8 hours or until the pork is tender and falls apart.
  3. Shred the pork using two forks directly in the slow cooker and mix with the juices.
  4. Warm the tortillas in a skillet over medium heat or in the microwave.
  5. Assemble your tacos: fill a tortilla with shredded pork, top with cabbage, tomatoes, and cilantro, and squeeze fresh lime on top.
  6. Serve arranged on a platter with lime wedges.
