Tender pulled pork served in warm tortillas, topped with fresh veggies and zesty lime.
Ingredients

- 2 pounds pork shoulder
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 tablespoon cumin
- Salt and pepper, to taste
- 8 small corn or flour tortillas
- 1 cup shredded cabbage
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- Lime wedges for serving
Instructions
- Combine ingredients in your slow cooker: layer the pork shoulder, chopped onion, minced garlic, chili powder, cumin, salt, and pepper. Mix well.
- Slow cook on low for 8 hours or until the pork is tender and falls apart.
- Shred the pork using two forks directly in the slow cooker and mix with the juices.
- Warm the tortillas in a skillet over medium heat or in the microwave.
- Assemble your tacos: fill a tortilla with shredded pork, top with cabbage, tomatoes, and cilantro, and squeeze fresh lime on top.
- Serve arranged on a platter with lime wedges.
