Description

A tropical dessert featuring fried pineapple rings soaked in dark and coconut rum, served with a creamy dipping sauce.


Ingredients

  • 8 Pineapple Rings
  • 1 Cup Dark Rum
  • 1 Cup Coconut Rum
  • 1 ½ Cups All-Purpose Flour
  • 10 oz Sweetened Coconut Flakes
  • 2 Large Eggs
  • ½ Cup Coconut Milk
  • Vegetable Oil for Frying
  • 4 oz Cream Cheese, Softened
  • ½ Cup Powdered Sugar

Instructions

  1. Begin by soaking the pineapple rings in dark and coconut rum for at least one hour.
  2. Set up three shallow bowls with flour, egg and coconut milk mixture, and coconut flakes.
  3. Coat each pineapple ring in flour, then dip in the egg mixture, and finally press into the coconut flakes.
  4. Heat vegetable oil to 350°F (175°C) and fry the pineapple rings in small batches for about one minute on each side.
  5. Prepare the dipping sauce by mixing cream cheese, powdered sugar, and a splash of reserved rum until smooth.

Notes

Make ahead by soaking the pineapple up to 24 hours in advance for enhanced flavor. Avoid overcrowding in the frying pot for the best results.
