  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas, etc.)
  • 2 cups cooked white rice
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large skillet or wok over medium-high heat, ensuring it gets nice and hot.
  2. Add the minced garlic and ginger, stirring quickly for about 30 seconds until fragrant.
  3. Toss in the shrimp, cooking and stirring for about 3-4 minutes until pink and opaque.
  4. Mix in the vibrant mixed vegetables and stir-fry for another 3-5 minutes for a tender-crisp texture.
  5. Whisk together soy sauce, sesame oil, and honey in a small bowl, then pour it over the shrimp and vegetables.
  6. Serve the stir fry over a bed of warm, fluffy rice, seasoning with salt and pepper to taste, garnishing with sesame seeds if desired.
