- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar (for rolling)
- 2 teaspoons ground cinnamon (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
- Cream the softened butter with granulated and brown sugars until light and fluffy, about 3-5 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Mix together the granulated sugar and cinnamon for rolling in a small bowl.
- Using a cookie scoop, portion out tablespoon-sized pieces of dough, roll each in the cinnamon-sugar mixture.
- Place each ball on the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden and centers appear set yet soft.
- Let cool on the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
You can prepare the dough a day ahead and chill it. These cookies pair well with coffee, milk, or ice cream.
