Description

Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for rolling)
  • 2 teaspoons ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream the softened butter with granulated and brown sugars until light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Mix together the granulated sugar and cinnamon for rolling in a small bowl.
  7. Using a cookie scoop, portion out tablespoon-sized pieces of dough, roll each in the cinnamon-sugar mixture.
  8. Place each ball on the prepared baking sheet, spacing them 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are lightly golden and centers appear set yet soft.
  10. Let cool on the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

You can prepare the dough a day ahead and chill it. These cookies pair well with coffee, milk, or ice cream.
