Description

A moist and fluffy lemon loaf cake with a perfect balance of sweet and tart flavors, topped with a delicious lemon glaze.


Ingredients

  • 1 Cup Granulated Sugar
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Baking Soda

  • 3 Large Eggs
  • ½ Cup Vegetable Oil
  • ¼ Cup Milk
  • ¼ Cup Fresh Lemon Juice
  • 1 Tablespoon Lemon Zest
  • ½ Teaspoon Vanilla Extract
  • 1 Cup Powdered Sugar for Glaze
  • 2 Tablespoons Lemon Juice for Glaze

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Grease a loaf pan with butter or non-stick spray.
  3. Mix the dry ingredients: whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. Prepare the wet ingredients: whisk together the eggs, vegetable oil, milk, lemon juice, lemon zest, and vanilla extract until smooth.
  5. Combine the wet and dry mixtures, stirring until just combined.
  6. Transfer the batter to the prepared loaf pan.
  7. Bake for 50-60 minutes, checking for doneness with a toothpick.
  8. Prepare the glaze by whisking together powdered sugar and lemon juice.
  9. Glaze the cake once cooled, allowing it to drizzle down the sides.
  10. Slice and serve.
