- 2 Tablespoons Lemon Juice for Glaze
Instructions
- Preheat your oven to 350°F (180°C).
- Grease a loaf pan with butter or non-stick spray.
- Mix the dry ingredients: whisk together the flour, sugar, baking powder, baking soda, and salt.
- Prepare the wet ingredients: whisk together the eggs, vegetable oil, milk, lemon juice, lemon zest, and vanilla extract until smooth.
- Combine the wet and dry mixtures, stirring until just combined.
- Transfer the batter to the prepared loaf pan.
- Bake for 50-60 minutes, checking for doneness with a toothpick.
- Prepare the glaze by whisking together powdered sugar and lemon juice.
- Glaze the cake once cooled, allowing it to drizzle down the sides.
- Slice and serve.
