A savory and sweet meatloaf infused with bacon and a surprising layer of creamy macaroni and cheese.

- 1 lb ground beef
- 1 lb ground pork
- 1 cup breadcrumbs
- 1 egg
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tsp salt
- 1 tsp pepper
- 1 cup macaroni
- 1 cup shredded cheese (cheddar or similar)
- 1/2 cup cream
- 8 slices of bacon
- 1/2 cup maple BBQ sauce
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the ground beef, ground pork, breadcrumbs, egg, diced onion, minced garlic, salt, and pepper until well combined.
- Cook the macaroni according to package directions until al dente, then stir in the shredded cheese and cream until melted and creamy.
- Press half of the meat mixture into a loaf shape in a greased baking dish to form a well.
- Fill the well with the mac and cheese mixture, then encase it with the remaining meat mixture.
- Wrap the loaf with bacon slices and brush the top generously with maple BBQ sauce.
- Bake for about 1 hour or until the internal temperature reaches 160°F.
- Let it rest for a few minutes before slicing.

Make-ahead: Prepare the meat mixture and macaroni filling the day before for enhanced flavor. Ensure proper rest time after baking for moisture retention.
