Description

Delicious strawberry oatmeal bars combining the sweetness of fresh strawberries with the hearty crunch of toasted oats.


Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups fresh strawberries, chopped
  • 1/4 cup strawberry jam
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your 9×9 inch baking dish generously.
  2. Prepare the oat mixture: In a large bowl, combine the rolled oats, all-purpose flour, both sugars, and salt. Stir to mix evenly.
  3. Add the melted butter and vanilla extract, mixing until the ingredients crumble together.
  4. Form the crust by pressing half of the oat mixture into the bottom of your prepared baking dish.
  5. Make the strawberry filling: In another medium bowl, toss together the chopped strawberries, strawberry jam, and lemon juice until well coated. Pour this mixture over your crust.
  6. Top with the remaining oat mixture, sprinkling it atop the strawberries.
  7. Bake the bars for 25-30 minutes, until the top is golden brown.
  8. Cool in the pan before cutting into squares.

Notes

These bars can be made ahead and stored in an airtight container for up to a week or frozen for three months.
