Delicious strawberry oatmeal bars combining the sweetness of fresh strawberries with the hearty crunch of toasted oats.

- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups fresh strawberries, chopped
- 1/4 cup strawberry jam
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C) and grease your 9×9 inch baking dish generously.
- Prepare the oat mixture: In a large bowl, combine the rolled oats, all-purpose flour, both sugars, and salt. Stir to mix evenly.
- Add the melted butter and vanilla extract, mixing until the ingredients crumble together.
- Form the crust by pressing half of the oat mixture into the bottom of your prepared baking dish.
- Make the strawberry filling: In another medium bowl, toss together the chopped strawberries, strawberry jam, and lemon juice until well coated. Pour this mixture over your crust.
- Top with the remaining oat mixture, sprinkling it atop the strawberries.
- Bake the bars for 25-30 minutes, until the top is golden brown.
- Cool in the pan before cutting into squares.
Notes
These bars can be made ahead and stored in an airtight container for up to a week or frozen for three months.
