Instructions
- Heat the oil in a large skillet or wok over medium-high heat until it shimmers.
- Add the chicken pieces, spreading them evenly across the pan. Let them sear for about 5-7 minutes, stirring occasionally, until they turn golden brown and reach an internal temperature of 165°F.
- Toss in the bell peppers, pineapple chunks, and broccoli florets. Stir-fry for an additional 3-4 minutes until they soften slightly but maintain a pleasing crunch.
- Pour in the sweet and sour sauce and soy sauce, giving it a good stir to ensure every morsel is coated evenly.
- Let it cook for another 2 minutes, allowing the flavors to meld and the entire dish to heat through.
- Serve hot over cooked rice or noodles.
