Description

Ingredients

  • 1 cup bell peppers, sliced (mix of colors)
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup broccoli florets
  • 2 tablespoons vegetable oil (or sesame oil)
  • 1/2 cup sweet and sour sauce (store-bought or homemade)
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • Cooked rice or noodles for serving

Instructions

  1. Heat the oil in a large skillet or wok over medium-high heat until it shimmers.
  2. Add the chicken pieces, spreading them evenly across the pan. Let them sear for about 5-7 minutes, stirring occasionally, until they turn golden brown and reach an internal temperature of 165°F.
  3. Toss in the bell peppers, pineapple chunks, and broccoli florets. Stir-fry for an additional 3-4 minutes until they soften slightly but maintain a pleasing crunch.
  4. Pour in the sweet and sour sauce and soy sauce, giving it a good stir to ensure every morsel is coated evenly.
  5. Let it cook for another 2 minutes, allowing the flavors to meld and the entire dish to heat through.
  6. Serve hot over cooked rice or noodles.
