Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a mixing bowl, combine the lemon cake mix, water, vegetable oil, and eggs. Mix on medium speed until smooth, about 2-3 minutes.
- Gently fold in the mixed berries and lemon juice with a rubber spatula.
- Pour the batter into the prepared baking pan, smoothing the top with a spatula.
- Bake for 25-30 minutes, checking for doneness with a toothpick.
- Once cooled, prepare the glaze by mixing powdered sugar with lemon zest and lemon juice until smooth.
- Drizzle the glaze over the cake.
- Top with whipped cream and fresh berries before serving.
Notes
For extra flavor, prepare the batter a day ahead and refrigerate it overnight. This cake can also be made in an air fryer—adjust the time to about 15-20 minutes at 320°F.
