Description

A delightful cake blending the tangy freshness of lemon with the sweetness of mixed berries, perfect for celebrations or a cozy afternoon treat.


Ingredients

  • 1 box lemon cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup lemon juice
  • 1 cup powdered sugar
  • 2 tablespoons lemon zest
  • Whipped cream for topping
  • Fresh berries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a mixing bowl, combine the lemon cake mix, water, vegetable oil, and eggs. Mix on medium speed until smooth, about 2-3 minutes.
  3. Gently fold in the mixed berries and lemon juice with a rubber spatula.
  4. Pour the batter into the prepared baking pan, smoothing the top with a spatula.
  5. Bake for 25-30 minutes, checking for doneness with a toothpick.
  6. Once cooled, prepare the glaze by mixing powdered sugar with lemon zest and lemon juice until smooth.
  7. Drizzle the glaze over the cake.
  8. Top with whipped cream and fresh berries before serving.

Notes

For extra flavor, prepare the batter a day ahead and refrigerate it overnight. This cake can also be made in an air fryer—adjust the time to about 15-20 minutes at 320°F.
