- 1 onion, diced
- 2 cloves garlic, minced

- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Sauté the diced onion and garlic until golden and translucent, about 3-5 minutes.
- Add the cubed sweet potatoes, smoked paprika, salt, and pepper, and stir well. Sauté for about 15-20 minutes until tender.
- Stir in the shredded BBQ chicken and heat for 2-3 minutes.
- Sprinkle cheese on top, cover and let melt for 3-4 minutes.
- Garnish with parsley before serving.
