Description

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 pound BBQ chicken, cooked and shredded
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sauté the diced onion and garlic until golden and translucent, about 3-5 minutes.
  3. Add the cubed sweet potatoes, smoked paprika, salt, and pepper, and stir well. Sauté for about 15-20 minutes until tender.
  4. Stir in the shredded BBQ chicken and heat for 2-3 minutes.
  5. Sprinkle cheese on top, cover and let melt for 3-4 minutes.
  6. Garnish with parsley before serving.
