Description

A vibrant fusion of tender marinated pork, soft tortillas, and fresh toppings that create a delightful culinary experience.

Ingredients

Scale
  • 2 lbs Pork Shoulder
  • 12 Soft Corn or Flour Tortillas
  • 1 cup Finely Diced Onions
  • 1 cup Chopped Cilantro
  • ¼ cup Fresh Lime Juice
  • 1 cup Salsa (verde or roja)
  • 1 cup Grilled Pineapple (optional)
  • 2 tsp Cumin
  • 2 tsp Paprika
  • 2 tsp Chili Powder
  • 1 tsp Oregano
  • Salt to taste

Instructions

  1. Marinate the Pork: In a large mixing bowl, combine your pork shoulder with cumin, paprika, chili powder, lime juice, and salt. Mix well to coat the meat, then cover and let it marinate for at least 120 minutes or overnight in the refrigerator for the best flavor.
  2. Grill the Pork: Preheat your grill or grill pan to medium-high heat. Remove the pork from the marinade and grill it until cooked through and slightly charred, approximately 15-20 minutes per side. Use a meat thermometer for the perfect doneness—145°F is a good target.
  3. Let it Rest: Once cooked, take the pork off the grill and let it rest for 10 minutes. This step prevents the juices from running out when slicing.
  4. Slice the Pork: Use a sharp knife to slice the pork shoulder into small, bite-sized pieces. The charred exterior will be a stunning contrast to the succulent interior.
  5. Warm the Tortillas: Place tortillas on the grill or stovetop for 20-30 seconds per side, or until warmed through.
  6. Assemble the Tacos: On a warm tortilla, place a generous portion of sliced pork. Top with diced onions, cilantro, and a spoonful of salsa, bringing it all together with a squeeze of fresh lime juice.
  7. Serve & Enjoy: Set out lime wedges and perhaps an extra bowl of salsa for those who like a bit more kick. Savor each bite of your delicious tacos!

Notes

For maximum flavor, marinate the pork overnight and ensure the tortillas are warm before serving.
