Description

A comforting casserole featuring creamy mashed potatoes, crispy bacon, and melty cheese, perfect for family gatherings.


Ingredients

  • 4 large russet potatoes
  • 1/2 cup butter
  • 1 cup sour cream
  • 2 cups shredded cheese (cheddar)
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup chopped green onions
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake the russet potatoes on a baking sheet for about 1 hour, or until tender.
  3. Once cooled, cut the potatoes in half lengthwise and scoop out the insides into a mixing bowl.
  4. Mash the insides with butter, sour cream, and half of the shredded cheese until smooth.
  5. Stir in the crumbled bacon and chopped green onions, seasoning with salt and pepper.
  6. Spoon the mixture back into each potato skin half and top with the remaining cheese.
  7. Bake again at 375°F (190°C) for about 15-20 minutes, until the cheese is bubbling and golden brown.
  8. Serve warm and enjoy.

Notes

For variance, you can substitute sour cream with plain Greek yogurt and add sautéed mushrooms instead of bacon for a vegetarian option.
