- 1 pound fresh green beans, trimmed
- 8 ounces mushrooms, sliced
- 1 medium onion, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 can (10.5 ounces) cream of mushroom soup
- 1 cup milk
- 1 teaspoon soy sauce
- 1 cup shredded cheddar cheese
- 1 cup breadcrumbs
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Bring salted water to a boil in a large pot. Add the green beans and blanch for 5 minutes, then drain and set aside.
- Heat olive oil in a skillet over medium heat. Sauté the onions and mushrooms for 5 to 7 minutes until softened. Add minced garlic and cook for an additional minute.
- Combine the cream of mushroom soup, milk, and soy sauce in a mixing bowl. Whisk until smooth, then stir in the sautéed vegetables and blanched green beans.
- Transfer the mixture to a greased baking dish. Top with shredded cheddar cheese and breadcrumbs.
- Bake for 25 to 30 minutes until bubbly and golden brown.
- Allow to cool slightly before serving.
Notes
Prepare the casserole a day in advance and store in the fridge. You can adjust cooking time for air frying. Fresh breadcrumbs are recommended for the best texture.
