Description

A whimsical, colorful loaf filled with banana flavor and topped with a sweet glaze and rainbow sprinkles, perfect for celebrations.


Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • Food coloring (pastel colors)
  • Rainbow sprinkles
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 1 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan thoroughly with butter or non-stick spray.
  2. Combine the mashed bananas and melted butter in a mixing bowl, stirring until well blended.
  3. Gradually stir in the sugar, then add the beaten egg and vanilla extract, mixing until smooth.
  4. Sprinkle in the baking soda and salt, blending it into the mixture.
  5. Incorporate the flour gradually until just combined, being careful not to overmix.
  6. Divide the batter into small bowls and use food coloring to create your desired pastel shades.
  7. Layer the colored batters in your loaf pan, swirling them with a skewer or knife for a marbled effect.
  8. Bake for 60 minutes or until a toothpick comes out clean.
  9. Cool the bread in the pan before transferring it to a wire rack.
  10. Whisk together powdered sugar, milk, and vanilla for the glaze and drizzle over the bread before serving.
